Deproteinisation and removal of fat from the sample followed by polarimetric determination.

This Section of BS 1741 describes a reference method for the determination of the lactose content of liquid milk of all types. Preserved samples may be analysed by this procedure provided that it can be shown that the preservative does not interfere with the determination.
