Le présent document définit les termes relatifs à la maîtrise de l'hygiène applicables à tous les domaines de l'agro-alimentaire et pour toute entreprise publique ou privée qui exerce dans ces domaines une activité de production primaire, préparation, transformation, conditionnement, stockage, transport, distribution, manutention et vente ou mise à disposition d'aliments ou d'aliments pour les animaux. Le présent document a pour objet de faciliter la compréhension mutuelle nécessaire pour mener à bien toute démarche relative à l'hygiène, à la maîtrise des dangers et à l'analyse des risques. Dans le présent document, le terme 'aliment' désigne les aliments de l'homme et des animaux.
