Le présent document décrit la méthode acido-butyrométrique dite "de Gerber" de détermination de la teneur en matière grasse du lait applicable au lait entier et partiellement écrémé. Elle est également applicable au lait contenant les conservateurs autorisés (dichromate de potassium, bronopol). Elle ne s'applique pas au lait formolé, ni aux laits ayant subi un traitement d'homogénéisation.
